Os servidores configuram para não aparecer esses erros e como eu não gosto de mexer no php.ini coloco esse código na primeira linha do cógigo para poder fazer os testes no meu computador.

É só colocar isso antes de qualquer script e ta resolvido, mas se você quer mexer no php.ini ai é com você.
E isso não é só com as sessões, tenta colocar uma condicão usando $HTTP_GET_VARS[] sem ter nenhuma descricão na barra de endereços, tabém vai dar erro, por isso eu te digo não é erro de sessão e sim que o php esta configurado para mostrar 100% dos erros, mesmo que não sejam necessáriamente erros.
